Dr. David Schultz’s Ramsey County Fair

Blue Ribbon Winner Brownies

Ingredients

2 cups flour

2 teaspoons baking powder

1 teaspoon salt

3/4 cup butter, softened

3/4 cup sugar

3/4 brown sugar

1 teaspoon vanilla

½ cup cocoa powder (Ghiradelli)

3 eggs

12 ounces chocolate cups (Guittard or Ghiradelli)

Directions

1. Preheat oven to 350 degrees.

2. Thoroughly grease a 15" x 10" x 1" pan (or similar size pan).

3. Combine flour, baking powder, cocoa powder, and salt in a small bowl.

4. Combine butter, sugars, and vanilla in a separate bowl and beat until creamy. Add eggs one at a time, beating well after each addition until all these items are thoroughly mixed.

5. Thoroughly combine the flour and sugar/butter mixtures until completely mixed.

6. Mix in chocolate chips.

7. Spread evenly into the greased pan.

8. Bake for 30-35 minutes. “Done” is when you place a toothpick or fork in the brownie and it comes out clean.

9. Cool, cut into squares, and enjoy!

Variations:

* Substitute mint chocolate chips or any or favorite chip instead of the chocolate chips.

* Substitute almond extract for the vanilla extract (or add the almond extract in addition to the vanilla extract).

* Front the brownies with your favorite chocolate frosting or glaze.
